Summer Berry Granola
I’m a big granola lover and this Summer Berry Granola is perfect for when you’re craving the cosiness of a bowl of granola in the summer heat. Freeze dried berries add a lovely pop of summery flavours and a nice crunch to the granola.
How to Make Summer Berry Granola
I love granola because it can be such a delicious and nutritious breakfast and snack. I find that many commercially available granolas are packed with sugars and contain many ingredients I find to be unfavourable. Making granola at home is incredibly easy and is a really enjoyable experience. What I love about making my own granola is that there are infinite different combinations to try and by making it at home I get the creative control to choose all my own ingredients and add ins.
Ingredients
When I was in the US a couple of summers ago, I bought freeze dried blueberries and strawberries at Trader Joe’s to use in this recipe. I find freeze dried fruit a bit more difficult to find in Canada, but it is available to order on websites like Amazon and Well.ca if you can’t find any in your local grocery store.
I make my granola using gluten free rolled oats, but regular rolled oats will work just fine here if you have no issues with gluten.
- Gluten free rolled oats
- Unsweetened shredded coconut
- Flax seeds
- Almonds
- Cinnamon
- Cardamom
- Coconut oil
- Maple syrup
- Vanilla
- Freeze dried berries
Mix the Summer Berry Granola Ingredients
In a large mixing bowl, combine the oats, coconut, flax seeds, chopped almonds, cinnamon, salt, and cardamon. Mix well until combined.
Melt the coconut oil over medium low heat in a small pot. Whisk in the maple syrup and vanilla.
Pour the wet mixture over the dry ingredients and fold together with a baking spatula until everything is evenly incorporated.
Bake the Summer Berry Granola
Transfer the granola to a lined baking sheet and bake at 325°F for 25 minutes, or until the granola is lightly golden in colour.
Remove the granola from the oven and allow to cool for about 10 minutes.
Stir the freeze dried berries into the cooled granola until evenly distributed.
Store and Enjoy!
Store the Summer Berry Granola in an airtight container or jar to enjoy for up to two weeks.
Just like other granolas, my Summer Berry Granola pairs beautifully with Greek yogurt, milk, or on top of a cool smoothie bowl. To make things extra summery, I like to add extra fresh summer berries to my granola too.
I love to have granola at breakfast time, but it also makes an excellent snack. Sometimes a small bowl of granola after work is exactly what I need to tide me over until dinnertime.
