Ingredients

  • 3 cups gluten free rolled oats
  • 1 cup unsweetened shredded coconut
  • 1/3 cup flax seeds
  • 1/2 cup almonds, chopped
  • 1/4 teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/3 cup coconut oil
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 2 cups freeze dried berries

Instructions

  • Preheat the oven to 325℉. Line a rimmed baking sheet with parchment paper and set aside.
  • In a large bowl, combine the oats, coconut, flax seeds, almonds, salt, cinnamon, and cardamom. Mix well.
  • In a small pot heat the coconut oil over medium low heat until melted. Whisk in the maple syrup and vanilla. Pour the wet mixture over the dry and use a baking spatula to stir until completely incorporated.
