Caramelized Onion, White Bean, and Feta Dip

The holiday season can come with some serious cooking burnout and dish decision fatigue. If you’re struggling to make it to the finish line and can’t stand the thought of making one more dish, might I suggest this Caramelized Onion, White Bean, and Feta dip? It’s five ingredients—seven if you include the salt and pepper—and comes together easily in a blender or food processor to produce the most pillowy and delicious dip. Bring it to NYE, a girls’ night, or a work potluck with a bag of chips and some sliced veggies, and voilà, you’ll receive nothing but compliments!

Caramelized Onion, White Bean, and Feta Dip Ingredients
To make this dip, you will need the following ingredients:
- One large onion
- 2 tablespoons olive oil
- 14 oz. can of cannellini beans
- 120 grams feta cheese
- Juice of half a lemon
- Sea salt
- Fresh black pepper
What to Serve with Caramelized Onion, White Bean, and Feta Dip
This is a very good chip dip. I especially love to serve this dip with my all-time favourite chips, Krinkle Cut Salt and Fresh Ground Pepper Kettle Chips (IYKYK). This dip also pairs beautifully with:
- Pita and naan bread
- Fresh vegetables such as carrots, celery, and cucumber
- Crackers
- Crusty bread
Step One—Caramelize the Onions
True caramelized onions are a bit of a labour of love, but I promise you, they’re worth it! To truly caramelize onions, about an hour of cooking time is required. The onions get sautéed over low heat for an extended period of time until they turn jammy, sweet, and a deep caramel colour. An hour may sound like a lot of time to commit to an onion, but the good news is the onions only need to be stirred periodically, so you can complete other tasks while they cook.
Using a sharp knife, slice the onion into thin, even pieces. Heat a large frying pan over medium-low heat. Add the olive oil to the heated pan and swirl to coat. Add the sliced onions. Cook the onions over low heat, stirring frequently, for one hour, or until jammy and deeply caramelized. If the onions are browning too fast, you can add a splash of water to the pan as needed.
When the onions are finished caramelizing, season them with sea salt and fresh black pepper.
Step Two—Blend the Dip
In a high-speed blender or food processor, blend the cannellini beans, feta, lemon juice, and caramelized onions—being sure to reserve some onions to use as a garnish! Blend until smooth. You can add a splash of water to the blender to help thin out the dip if needed. Blend until smooth, taste, and adjust the seasoning.
Step Three—Garnish and Serve
Transfer the dip to a serving dish, garnish with the reserved caramelized onions, a drizzle of olive oil, and some fresh parsley. The dip will keep in an airtight container in the fridge for up to a week.
