Caramelized Onion, White Bean, and Feta Dip

Caramelized Onion, White Bean, and Feta Dip is the perfect pillowy-soft, salty, and slightly sweet dish to serve at social gatherings. This dip feels sophisticated, but in reality is incredibly simple to make.

Equipment

Ingredients

  • 1 large onion
  • 2 tablespoons olive oil
  • 14 oz can of cannellini beans
  • 120 grams feta cheese (2/3 cup)
  • Juice of half a lemon
  • Sea salt and fresh black pepper, to taste

To Garnish

  • Caramelized onions
  • Olive oil
  • Fresh parsley

To Serve with

  • Crackers or chips
  • Pita
  • Fresh vegetables such as carrots, celery, and cucumbers

Instructions

  • Heat a large frying pan over medium-low heat. While the pan is heating, thinly slice the onion. Add the olive oil to the heated pan and swirl to coat. Add the sliced onions.
  • Cook the onions over low heat, stirring frequently, for one hour, or until jammy and deeply caramelized. If the onions are browning too fast, you can add a splash of water to the pan as needed.
  • When the onions are finished caramelizing, season them with sea salt and fresh black pepper.
  • In a high-speed blender or food processor, blend the cannellini beans, feta, lemon juice, and caramelized onions—being sure to reserve some onions to use as a garnish! Blend until smooth. You can add a splash of water to the blender to help thin out the dip if needed. Blend until smooth, taste, and adjust the seasoning.
  • Transfer the dip to a serving dish, garnish with the reserved caramelized onions, a drizzle of olive oil, and some fresh parsley. The dip will keep in an airtight container in the fridge for up to a week.
