Caramelized Onion, White Bean, and Feta Dip is the perfect pillowy-soft, salty, and slightly sweet dish to serve at social gatherings. This dip feels sophisticated, but in reality is incredibly simple to make.

120gramsfeta cheese(2/3 cup)
Juice of half a lemon
Sea salt and fresh black pepper, to taste

Instructions
Heat a large frying pan over medium-low heat. While the pan is heating, thinly slice the onion. Add the olive oil to the heated pan and swirl to coat. Add the sliced onions.
Cook the onions over low heat, stirring frequently, for one hour, or until jammy and deeply caramelized. If the onions are browning too fast, you can add a splash of water to the pan as needed.
When the onions are finished caramelizing, season them with sea salt and fresh black pepper.
In a high-speed blender or food processor, blend the cannellini beans, feta, lemon juice, and caramelized onions—being sure to reserve some onions to use as a garnish! Blend until smooth. You can add a splash of water to the blender to help thin out the dip if needed. Blend until smooth, taste, and adjust the seasoning.
Transfer the dip to a serving dish, garnish with the reserved caramelized onions, a drizzle of olive oil, and some fresh parsley. The dip will keep in an airtight container in the fridge for up to a week.
