With Easter coming up and spring just around the corner I thought it would be fun to share a more vibrant recipe to help me get over my serious case of the winter blues. Lately I’ve been really into making myself big smoothies for breakfast, which I enjoy on my couch, under a nice fuzzy blanket in the earl hours of the morning. This big bright beet smoothie has been my goto recently. The sweetness from the banana and berries mashed with the earthy undertones of the beets makes for a unique and fun flavour. This mixture helps me get out of bed in the morning haha.

I like to keep a big container of beets in my freezer to have at the read for when a smoothie craving hits. I peel, chop and steam my beets prior to freezing them to make for easier blending and digesting in the future without losing lowing the nutrient content. Beets are an awesome thing to add to our morning blend because they are high in fibre, they have anti-inflamitory properties, and they give smoothies a beautiful vibrant colour. You can also play around with the berry combo to get colours ranging from purple to a deep velvety red.

To amp up the fun I played around with layering the smoothie and got some epic results. The smoothie is great on its own or layered up with chia-y goodness, it’s totally up to you how you want to serve it.

Big, Bright Layered Beet Smoothie Jars

Servings: 2 large smoothie jars

Ingredients

Big Bright Beet Smoothie

  • 100 grams beets, steamed + frozen
  • 1 ripe frozen banana
  • 1 cup mixed frozen berries
  • 2 tablespoons pea protein powder
  • 1 teaspoon maca powder
  • 1/4 teaspoon ground cardamom
  • 1 tablespoon hemp hearts
  • 1-1/4 cups almond milk

Chia Pudding

  • 1/4 cup chia seeds
  • a pinch of ground cardamom
  • 1 cup almond milk
  • 1 teaspoon vanilla
  • 1 teaspoon maple syrup

Instructions

For the Chia Pudding

  • Make the chia pudding in advance by whisking together all the ingredients in an airtight container or jar. Put the pudding in the fridge to gel for a few hours or overnight. Be sure to whisk it a few times within the first hour to ensure that it gels evenly.

For the Big Bright Beet Smoothie

  • Combine all the ingredients in a blender and blend until smooth. 

To Construct the Smoothie Jars

  • Add a heaping spoonful of chia pudding to two standard mason jars. Press some thinly slice fruit against the insides of the jars, then pour in a bit of the smoothie. Repeat until each jar is full.
  • Enjoy immediately or store in the fridge for a couple of days to take with your when you're in a rush.
