One of my favourite ways to use up leftover chicken is to make this Curried Chicken Salad. Full of tender chicken, crisp vegetables, and curry spices, this protein-packed salad is sure to become a lunchtime staple for you too.

How to Make Curried Chicken Salad

Something I love about chicken salad is how versatile it is. This recipe includes my favourite chicken salad ingredients, but don’t be afraid to stray from the recipe and experiment a bit! This salad tends to change every time I make it, depending on what produce I have at my disposal.

Curried Chicken Salad Ingredients

To make this salad, you can use any leftover chicken you have on hand: thighs, breasts, a mix of dark and light meat, anything goes! In addition to the chicken, you will need the following ingredients:

  • Cooked chicken
  • Celery
  • Green onions
  • Apple
  • Red bell pepper
  • Mayonnaise
  • Dijon mustard
  • Curry powder
  • Cumin
  • Raisins
  • Sea salt
  • Fresh black pepper

Prepare the salad ingredients

Prepare the salad ingredients by chopping or shredding your chicken, finely chopping the celery, apple, red pepper, and green onion. Add all the prepared ingredients to a large mixing bowl with the raisins, if using. You can use golden or regular raisins interchangeably.

Give the ingredients a toss, then set aside while you prepare the curried mayonnaise dressing.

Make the Curried Mayonnaise Dressing

In a small bowl, whisk together the mayonnaise, Dijon mustard, curry powder, and cumin powder until fully combined.

Transfer the curried mayo mixture to the mixing bowl with the salad ingredients.

Prepare the salad and enjoy!

Toss the salad until evenly coated with the curried mayonnaise dressing. Season with sea salt and fresh black pepper, to taste.

Serve the Curried Chicken Salad immediately, or store it in an airtight container in the fridge for up to four days.

Ingredients

  • 2 cups chopped or shredded cooked chicken
  • 1 large celery stalk, diced
  • 2 green onions, diced
  • 3/4 cup apple, diced
  • 1/2 red bell pepper, diced
  • 2 tablespoons raisins (optional)
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon curry powder
  • 1/2 teaspoon cumin powder
  • Sea salt and fresh black pepper, to taste

Instructions

  • In a large mixing bowl, toss together the chopped or shredded chicken, celery, green onions, apple, bell pepper, and raisins.
  • In a small bowl, whisk together the mayonnaise, Dijon mustard, curry powder, cumin powder, sea salt, and black pepper until combined.
  • Pour the mayonnaise mixture into the bowl with the chicken and toss until the chicken salad is evenly coated in the curry mayonnaise.
  • Enjoy immediately, or store in an airtight container in the fridge for up to four days.
