2cupschopped or shredded cooked chicken
1largecelery stalk, diced
2green onions, diced
3/4cupapple, diced
1/2red bell pepper, diced
2tablespoonsraisins(optional)
1/4cupmayonnaise
1teaspoonDijon mustard
1tablespooncurry powder
1/2teaspooncumin powder
Sea salt and fresh black pepper, to taste
Instructions
In a large mixing bowl, toss together the chopped or shredded chicken, celery, green onions, apple, bell pepper, and raisins.
In a small bowl, whisk together the mayonnaise, Dijon mustard, curry powder, cumin powder, sea salt, and black pepper until combined.
Pour the mayonnaise mixture into the bowl with the chicken and toss until the chicken salad is evenly coated in the curry mayonnaise.
