A plant that brings me a great amount of joy to have growing in my garden year after year is lavender. Lavender is not only beautiful to look at and beloved by pollinators, but it is also so versatile and can be used to make so many wonderful creations.

Every year when the lavender starts blooming I am sure to cut and dry some for later use. One of my favourite ways to use the dried lavender is to infuse a nice clear, runny, local honey with it for a delicious addition to cups of tea, yogurt bowls, or slices of toast. Infusing honey is surprisingly easy and incredibly rewarding. The method for infusing honey is strait forward and doesn’t require any niche culinary utensils or tools. All you need is a pot, a glass or metal bowl, a fine mesh sieve, and a jar or container for storing the final product.

Step One

Honey infusion begins with setting up a simple double boiler using a pot and a metal or glass bowl. Add an inch or two of water to the pot – you don’t want the water to touch the bottom of the bowl – and then place the bowl on top.

Step Two

Add 1 cup of honey to the double boiler and heat until the honey becomes very runny, almost like water. At this point you can stir in 1/2 a cup of dried lavender flowers. Stir well to insure the lavender has been evenly dispersed.

Step Three

Remove the honey from the heat and allow it to infuse for eight hours or overnight.

Step Four

Once the infusing is finished, return the honey to the double boiler and reheat until it once again reaches a very runny consistency. Strain the warmed honey through a fine mesh sieve to remove the lavender flowers. Allow to cool and then store in an airtight jar in the pantry.

It’s really that simple! In four easy steps you can have your very own lavender infused honey at home. If you don’t grow lavender in your garden or don’t want to go through the hassle of drying the flowers yourself, dried lavender can usually be found at tea shops, bulk stores, or online.
