Lavender Infused Honey

Ingredients

  • 1 cup pure honey
  • 1/2 cup dried lavender flowers

Instructions

  • Set up a simple double boiler using a pot and a metal or glass bowl. Add an inch or two of water to the pot - you don't want the water to touch the bottom of the bowl - and then place the bowl on top.
  • Add the honey to the double boiler and heat until it becomes very runny, almost like water. At this point you can stir in the dried lavender flowers. Stir well to insure the lavender has been evenly dispersed.
  • Remove the honey from the heat and allow it to infuse for eight hours or overnight.
  • Once the infusing is finished, return the honey to the double boiler and reheat until it once again reaches a very runny consistency. Strain the warmed honey through a fine mesh sieve to remove the lavender flowers. Allow to cool and then store in an airtight jar in the pantry.
