I am now officially done high school. I wrote my final exam last Friday and am graduating this Thursday. I must say it’s a pretty weird feeling. Since I have nothing to study for and no applications left to do I can finally do things that I actuallyΒ wantΒ to do. My “to-do” list currently consists of baking a cake, baking cookies, wrapping end of year gifts and playing the piano. I’m pretty pleased with that list of tasks.

Back in the tenth grade I adapted a flourless chocolate cake recipe for my friend’s 15th birthday. Needless to say it was a huge hit and my friend LucasΒ stillΒ talks about it two and a half years later. So when I was asked to provide the cake for my calculus class party (yes we are having a calculus party, no we are not ashamed) my immediate thought was to make my infamous flourless chocolate cake. Lucas was pretty excited when I told him.

I made a vegan version of this cake a few months back for my friend’s surprise party and it worked pretty well. If you are vegan the eggs in this recipe can be replaced with six flax eggs. One flax egg can be made by combining a tablespoon of ground flax with three tablespoons of water. Mix that together and leave it to sit for about 15 minutes and you’ve got a flax egg! Using real eggs will give you the best results, but using a vegan alternative can work too.

Flourless Chocolate Cake

Ingredients

  • 12 oz dark chocolate (70% cocoa or higher)
  • 3/4 cup coconut oil
  • 6 eggs* (at room temperature)
  • 1-1/2 cups coconut sugar**
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking soda

Instructions

  • Preheat the oven to 325Β°F and grease a 9 inch springform pan with coconut oil.
  • In a double boiler melt the chocolate and oil along with the salt over medium heat.
  • Meanwhile, beat eggs and sugar together in the bowl of a stand mixer until light and thickened. This takes about 5 or so minutes. Fold in the chocolate mixture and the baking soda until completely combined.
  • Pour the batter into your prepared pan and bake in the centre of the oven for 1 hour and 25 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and allow to cool completely before removing it from the pan.
  • Remove from pan and serve with fresh fruit, coconut cream, ice-cream or just eat it on its own!

Notes

*For a vegan option, the eggs can be replaced by 6 chia or flax eggs
**Regular white sugar can be substituted for coconut sugar
