End of Summer Pesto Pasta

End of Summer Pesto Pasta

This has been my go-to meal all summer and continues to be now. Before I left for school I made a huge batch of pesto and froze it to enjoy throughout my fall semester. This recipe is super easy and tasty. I may be a

Strawberry Rhubarb Crumble Loaf

Strawberry Rhubarb Crumble Loaf

This Strawberry Rhubarb Crumble Loaf highlights what is – in my opinion – the queen of summer produce: Ontario strawberries. Strawberry picking has become an annual tradition for me. I love being able to take advantage of the fantastic summer produce that is grown within

Salted Caramel Dream Bars

Salted Caramel Dream Bars

A few months back I was at Shoppers Drug Mart with some friends and made the happy discovery that my all-time favourite dark chocolate was on sale. Usually I can deter myself from buying chocolate simply because it is so damn expensive, but it was significantly harder to resist when it was only $5 for two whole bars! Needless to say, I bought two bars. I was able to hold off eating this glorious chocolate and instead used it to create something even more decadent, the stuff of dreams I would say. Buffalo Cauliflower Salad + Vegan Cool Lime Ranch Dressing

Buffalo Cauliflower Salad + Vegan Cool Lime Ranch Dressing

At the moment I have a little  bit of time off before I start work for the summer. That means that I have time to create some fun new recipes and other posts to share here! Yay! I spent my evening last night scrolling through

On-the-Go Greens Scramble

On-the-Go Greens Scramble

Now a days it’s all about ease and convenience. I can definitely relate. This semester has been a total whirlwind of assignments, midterms, exams, and a little bit of fun too, making it difficult to find spare time to do anything for myself. One commitment

Chocolate Swirl Banana Bread with Walnuts

Chocolate Swirl Banana Bread with Walnuts

Hi Friends! I Know that it has been quite some time since I last wrote.. I’ve been completely swamped by the workload that accompanies first year university. I have really missed writing and creating, so I decided to take my study break tonight to write up a new (and super YUM) recipe. But first, a little update about my life recently. Grilled Za’atar Flatbread with Garlic Infused Olive Oil and Smoky Eggplant Puree

Not gonna lie, this was a really fun recipe to create. I got to combine three of my fav things: bread, grilled food, and za’atar spice blend! Woo! I’ve made this recipe before using spelt flour (which worked great), but I wanted to try to

Chocolate Crispy Treats

Chocolate Crispy Treats

I have very fond childhood memories of my older sister, Emma, whipping up a batch of rice crispy squares after school, which we would then devour whilst watching The Ellen Show. Oh, to be 9 years old again.. But seriously, rice crispy squares are a classic treat.

Vegan Banana Chocolate Chunk Muffins

Vegan Banana Chocolate Chunk Muffins

I don’t know if I’ve mentioned this before, but I work at a bakery, which is pretty ironic considering that I can’t eat 99% of the product that we sell. Lucky for me we do have delicious gluten free and vegan muffins (yay!). Honest to God the vegan muffins that we sell are better than most regular muffins that I’ve had in my lifetime, no joke.  Since I love these muffins so much I decided to have a go at making them at home. In my version I swapped refined sugar for maple syrup and I used a blend of chickpea, almond and buckwheat flour to make it not only gluten free, but grain free as well. The three flour blend gives the muffins a very nice texture, I’m quite pleased with how they turned out. Continue reading Vegan Banana Chocolate Chunk Muffins

Cranberry & Apricot “Buttermilk” Scones

Cranberry & Apricot “Buttermilk” Scones

By taking a quick glance out the window it looks as though it’s April out there. Everything is wet, there are only tiny patches of snow remaining and the sky seems to be eternally grey. In case you didn’t know, April is one of my
