Sage Paloma Cocktail

Palomas are my favourite cocktail. If you know me, you know I’m a tequila girl! Unfamiliar with the paloma cocktail? Picture it like the margarita’s cool, more sophisticated cousin. Palomas have the same delicious citrus and tequila base as margaritas, but where they differ is in the inclusion of grapefruit and soda in addition to the lime juice. This Sage Paloma Cocktail is a twist on the original, which includes a delicious sage-infused simple syrup.

Sage Paloma Ingredients
For the Sage Simple Syrup
- 1 cup water
- 1/2 cup white sugar
- 10 large fresh sage leaves
For the Sage Paloma Cocktail
- 2 ounces fresh grapefruit juice
- 1/2 ounce fresh lime juice
- 2 ounces blanco tequila
- 1 ounce sage simple syrup
- Ice
- Sparkling water
Step 1—Make the Sage Simple Syrup
To make the sage simple syrup, add one cup of water and half a cup of white sugar to a small saucepan. Cook over medium heat, whisking constantly, until the sugar has fully dissolved.
Remove from the heat, then add the fresh sage leaves. Set aside to steep for 20 minutes.
Strain the steeped sage syrup into a jar through a fine mesh sieve to remove the sage leaves.
This recipe will make more syrup than you need. Leftover syrup can be stored in a sealed jar in the fridge for up to two weeks.
Step 2—Prepare the Sage Paloma
Select your cocktail glasses—rocks glasses or highball glasses work well for this.
Add the fresh grapefruit juice, lime juice, blanco tequila, and sage simple syrup to your cocktail glass. Stir well, add the ice, then top with sparkling water.
Step 3—Cheers!
Garnish the cocktail with fresh grapefruit slices and fresh sage leaves, then serve! The Sage Paloma is especially excellent when enjoyed outside in the sun with friends. 🙂

Sage Paloma Cocktail
Equipment
- Cocktail glasses
Ingredients
Sage Simple Syrup
- 1 cup water
- 1/2 cup white sugar
- 10 large fresh sage leaves
Sage Paloma
- 2 ounces fresh grapefruit juice
- 1/2 ounce fresh lime juice
- 2 ounces blanco tequila
- 1 ounce Sage simple syrup (see recipe above)
- Ice
- Sparkling water, to top
Instructions
Make the Sage Simple Syrup
- To a small saucepan, add the water and white sugar. Whisk over medium heat until warm and fully dissolved. Add the sage leaves and set aside to infuse for 20 minutes.
- Strain the sage simple syrup into a jar through a fine mesh sieve. This recipe makes extra sage syrup, which can be stored in an airtight jar in the fridge for up to two weeks.
Prepare the Sage Paloma
- Add the fresh grapefruit juice, fresh lime juice, blanco tequila, and sage simple syrup to a cocktail glass. Stir well, add the ice, then top with soda water. Serve and enjoy!
