Equipment

  • Cocktail glasses

Ingredients

Sage Simple Syrup

  • 1 cup water
  • 1/2 cup white sugar
  • 10 large fresh sage leaves

Sage Paloma

  • 2 ounces fresh grapefruit juice
  • 1/2 ounce fresh lime juice
  • 2 ounces blanco tequila
  • 1 ounce Sage simple syrup (see recipe above)
  • Ice
  • Sparkling water, to top

Instructions

Make the Sage Simple Syrup

  • To a small saucepan, add the water and white sugar. Whisk over medium heat until warm and fully dissolved. Add the sage leaves and set aside to infuse for 20 minutes.
  • Strain the sage simple syrup into a jar through a fine mesh sieve. This recipe makes extra sage syrup, which can be stored in an airtight jar in the fridge for up to two weeks.

Prepare the Sage Paloma

  • Add the fresh grapefruit juice, fresh lime juice, blanco tequila, and sage simple syrup to a cocktail glass. Stir well, add the ice, then top with soda water. Serve and enjoy!
