I cooked up some deliciously easy Shakshouka on my Instagram stories the other day and saved the recipe to my highlights, but I thought I would write it up and share the recipe here too for anyone who does not have Instagram.
It was yet another rainy fall Vancouver weekend. What’s different about the rain here versus in Ontario is that the people here are so accustomed to it raining almost all the time that it really doesn’t hinder their day’s plans. In fact, Vancouverites are so used to the rain that in pretty well every here there is an umbrella holder located near the entrance to house shoppers’ umbrellas whilst they browse and shop. When we decided to move to Vancouver for the fall people went “really?” because they knew that Ali and I would be arriving right in time for rainy season. If I’m being honest, I really don’t mind the rain. The only time I dislike rain is when it’s cold out, but the temperature here has been consistently hanging around 12 degrees Celsius, which has been perfect for walking the city as well as for running. Ali and I put on our rain jackets, grabbed our umbrellas and embarked on an afternoon exploration of Main Street, Vancouver. We had multiple recommendation to walk south along Main for a fantastic variety of eclectic thrift stores, gift shops, and good food. I cannot believe that it is already September! Where did the summer go?! This week I started my third (and final!) co-op term of my undergraduate degree. It’s hard to believe that I’m in my final year now; time has truly flown! I’ve definitely been experiencing information overload this week while settling into and navigating my new role, but I am very excited for this term. I’ve been pulling delicious, beautifully vibrant beets from the garden for the past few weeks and thought there was no better way to celebrate these stunning seasonal beauties than making them the centerpiece of a recipe. I always like to keep a batch of Big Cozy Vibes Tahini Granola in my kitchen for easy grab-and-go snacking and meals. There were a fair number of nights (more than I’d like to admit) during my fall semester where I found myself chowing down on a large bowl of granola at 10pm after teaching my Monday first-year business lab, nights when I simply had too much to do and not enough time to cook. In the fall I was literally flying through this granola; I had to make a new batch almost every week. If I had to pick one recipe that I make consistently, this would be it.
