Equipment

  • 1 Fine Mesh Sieve
  • 1 microplane grater

Ingredients

  • 1 cup thick Greek yogurt
  • 1/3 cup finely grated and drained cucumber (see instructions below.)
  • 2 garlic cloves, grated
  • 1/4 teaspoon fine sea salt
  • Fresh black pepper, to taste
  • 1/2 teaspoon fresh lemon juice
  • 1 teaspoon olive oil

Instructions

Prepare the Cucumber

  • Using a microplane grater, finely grate the cucumber. I used two Persian cucumbers to make this recipe and found they yielded the appropriate amount.
  • Place a fine mesh sieve over the sink or a clean mixing bowl. Transfer the grated cucumber to the sieve. Allow to drain for 5 minutes, then squish any excess liquid out with your hands. Make sure you have 1/3 cup of shredded cucumber after it has been strained.

Prepare the Tzatziki Dip

  • Add the thick Greek yogurt, grated cucumber, grated garlic, sea salt, pepper, and lemon juice to a small mixing bowl. Whisk well to combine.
  • Transfer the tzatziki to a serving bowl. Top with the olive oil and a bit of flaky salt (optional). Serve with fresh vegetables, pita bread, or crackers. The tzatziki will keep in the fridge for up to five days.
