Super-seeded Hemp Heart Granola

Ingredients

  • 4 cups gluten free oats
  • 1/2 cup hemp hearts
  • 1/3 cup flax seeds
  • 1/2 cup brown rice flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/3 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 1/4 cup brown rice syrup
  • 1 teaspoon vanilla

Instructions

  • Preheat the oven to 350ºF and line a large rimmed baking sheet with parchment paper. Toast the oats for 10 minutes, then remove from the oven and reduce the temperature to 325ºF.
  • In a large bowl combine all the dry ingredients and stir well.
  • In a small saucepan, melt the oil, then add the remaining wet ingredients. Cook over medium-low heat until the mixture is homogenous and just beginning to bubble. Remove from the heat and pour over the dry ingredients. Use a wooden spoon and mix until the wet is full incorporated into the dry. 
  • Transfer the granola to the prepared baking sheet and spread it out evenly. Lightly wet your hands and use them to gently press down the mixture. Pop it in the oven and bake for 30-35 minutes, flipping the granola halfway, then every 10 minutes after that.
  • Allow the granola to cool completely before transferring it to an airtight container or jar. The granola will keep for up to a month.
