Crispy Shallots
2largeshallots, peeled and thinly sliced
1/4cupolive oil
Frizzled Green Beans
1lbgreen beans, ends trimmed
2largegarlic cloves, minced
1/4teaspoonred chili flakes
2teaspoonsmaple syrup
Sea salt
Instructions
In a large frying pan, heat the olive oil over medium-low heat until the oil is 350℉. Line a small plate with paper towel and set aside.
While the oil is heating, thinly slice the shallots. To get even slices, I like to use a mandoline to slice the shallots. A sharp chef's knife will work too.
Add the sliced shallots to the hot oil and fry, stirring frequently, until golden brown. It will take about 3-4 minutes for the shallots to turn golden. Transfer the fried shallots to the paper towel-lined plate and season with salt.
Add the green beans directly into the pan you used to fry the shallots. Toss the beans to coat with oil, then fry the beans for 2 minutes undisturbed. Flip the beans and fry for a further 2 minutes undisturbed. Add the minced garlic, chili flakes, and salt. Fry for a further minute, then pour in the maple syrup. Toss the beans to coat and fry for a final 2 minutes, stirring frequently.
Remove the beans from the heat and transfer to a serving dish. Top the beans with the crispy shallots and serve.
