Flourless Chocolate Cake

Ingredients

  • 12 oz dark chocolate (70% cocoa or higher)
  • 3/4 cup coconut oil
  • 6 eggs* (at room temperature)
  • 1-1/2 cups coconut sugar**
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking soda

Instructions

  • Preheat the oven to 325°F and grease a 9 inch springform pan with coconut oil.
  • In a double boiler melt the chocolate and oil along with the salt over medium heat.
  • Meanwhile, beat eggs and sugar together in the bowl of a stand mixer until light and thickened. This takes about 5 or so minutes. Fold in the chocolate mixture and the baking soda until completely combined.
  • Pour the batter into your prepared pan and bake in the centre of the oven for 1 hour and 25 minutes or until a toothpick inserted in the middle comes out clean. Remove from oven and allow to cool completely before removing it from the pan.
  • Remove from pan and serve with fresh fruit, coconut cream, ice-cream or just eat it on its own!

Notes

*For a vegan option, the eggs can be replaced by 6 chia or flax eggs
**Regular white sugar can be substituted for coconut sugar
