Ingredients

  • 1 large garlic clove
  • 1/3 cup tahini
  • 1/4 cup olive oil
  • 1/4 cup lemon juice (approximately one lemon)
  • 2 cups cooked chickpeas (one 16oz can)
  • 1/2 teaspoon sea salt
  • fresh black pepper, to taste
  • 1/4 - 1/2 cup water

Instructions

  • Place the peeled garlic clove in a food processor and pulse to mince. Add the tahini, olive oil, and lemon juice. Blend on high until smooth.
  • To the food processor, add the chickpeas, sea salt, and black pepper. Blend again, adding water slowly through the spout until the desired consistency is reached.
  • Taste the hummus and adjust the seasoning as needed. Transfer to an airtight container and store for up to one week.
