Add all the ingredients to the same food processor used to make your nut and seed butter.
Pulse a few times, then blitz on high until everything is well combined and blended. The mixture will be quite crumbly, but should hold together when pinched. Additional nut butter can be added back into the food processor if needed.
Line an 8x8 inch baking pan with wax paper. Transfer the energy bite mix into the pan and press down until evenly spread. Refrigerate for about 2 hour or until firm.
Slice up your energy bites and enjoy! These can be stored in the fridge for up to two weeks.
