Morning Toast Three Ways

Sometimes I find that it’s best to keep things simple. I’m a big time planner when it comes to food; I always try to plan out each meal ahead of time to make my life a little easier. Most of my Sunday mornings are spent at the kitchen table flipping through cookbook after cookbook to decide what I want to have on hand and eat over the course of the upcoming week. Based off of my decisions, I compile a list of ingredients to stock up on. In my mind this is a wonderful system, but my family seems to find it bizarre and unrealistic (I beg to differ). Meal planning is a great way to reduce food waste and to prevent that dreadful moment where you open your empty fridge with a rumbling stomach and a lack of ideas.But, as we all know, life can be unpredictable and busy at times. Whenever I’m short on time in the morning and I had a late night the night before (i.e no time for breakfast meal prep) I typically reach for toast in the morning. It’s quick, easy and can be super tasty and fun. Here I’m sharing three of my go-to morning toasts for you to try when life happens and you just don’t have the time for anything else.

These recipes can easily be tweaked depending on what you have on hand at the time. For example, the avocado toast is awesome with a poached of soft boiled egg on top. Alternatively, the cream cheese toast can be served with any fresh fruit. It’s really up to you. Experiment, and have fun in the kitchen!

Morning Toast Three Ways

Serves 1

1 Slice bread of choice (I like rye)

Spicy Avocado Toast

1/4- 1/2 ripe avocado, mashed

1/4 teaspoon siracha

1/4 teaspoon nutritional yeast

Furikaka* (optional)

Sea salt and fresh pepper

Cream Cheese and Fig Toast

1 tablespoon cream cheese of choice (I use Tofutti, a vegan alternative)

1/2 teaspoon honey

1 fresh fig, thinly sliced

fresh pepper

Cinnamon Banana Toast

1 tablespoon almond butter, or nut butter of choice

1/2 teaspoon honey

1/4 teaspoon cinnamon

1/2-1 ripe banana, thinly sliced

Sea salt

 

Method

Pop your bread in the toaster and toast to your liking. Meanwhile:

For Avocado Toast: Mash the avocado, siracha, salt and pepper together in a small bowl. Spread the avocado mash on your toast, sprinkle with nutritional yeast and furikake (Asian seasoning), then munch away!

For Cream Cheese and Fig Toast: Spread the cream cheese and honey onto warm toast. Top with a bit of fresh cracked pepper and the fig slices. Voila! Breakfast is served.

For Cinnamon Banana Toast: Spread the nut butter and honey onto warmed toast. Top with banana slices, cinnamon and a pinch of sea salt. Easy as pie!
